Traditional Italian Salume made from a whole pork neck muscle. Brined and seasoned with red wine, garlic, paprika and chili before being rubbed with hot paprika, garlic and cayenne. Smoked until cooked. 

Used either as a cold cut or an excellent pizza topping usually paired with roasted peppers.
