Dry Cures by Four Quarters Meats. These are generally whole muscle cures seasoned with aromatics and dried for up to three months in the drying chamber. They may be smoked as in the case of Schinkenspeck, Cecina, and Country Ham; or unsmoked as in Coppa, Pancetta or Prosciuttini.
